Story (Part 32)

or sink, and put on some fun music or a favorite podcast. Get out all your ingredients and tools: a large cutting board, a sharp chef’s knife, a large soup pot (for the chili), and a slow cooker or a second large pot with a lid (for the chicken). Now, do all your chopping at once: Dice both yellow onions. Mince the garlic. Peel the sweet potatoes and cut them into bite-sized, 1/2-inch cubes. (Keeping them small ensures they cook quickly and evenly). Step 2: Get the Chicken Started (5 Minutes) The Salsa Chicken is incredibly hands-off. If using a slow cooker: Place your chicken thighs at the bottom. Pour the entire jar of salsa over the top, making sure the chicken is completely covered. Set it to Low for 6 hours (or High for 3-4 hours). If using a stovetop pot: Place the chicken and salsa in the pot, cover with a tight-fitting lid, and simmer on low heat for about 45 minutes to an hour, until the chicken is tender enough to shred easily with a fork. That’s it! Your protein base is now cooking itself. Step 3: Cook the Chili (40 Minutes) While the chicken is simmering, turn your attention to the stove to make your Sweet Potato & Black Bean Chili. Sauté: Heat a tablespoon of oil in your large soup pot over medium heat. Add your diced onions and minced garlic. Sauté for about 5 minutes, stirring occasionally, until the onions are soft and translucent. Spice it up: Add 2 tablespoons of chili powder, 1 tablespoon of ground cumin, and 1 teaspoon of dried oregano to the pot. Stir the spices into the hot onions for about 1 minute. This "blooms" the spices in the oil, unlocking an incredible depth of flavor that makes cheap ingredients taste expensive. Combine: Add the cubed sweet potatoes, the two cans of tomatoes (with their juices), and your drained black beans. Stir well to combine. If the mixture looks too thick, add 1 cup of water or vegetable broth (remember Rule 1: moisture is key!). Simmer: Bring the chili to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer gently for 30 to 35 minutes, or until the sweet potatoes are completely fork-tender. Finish: Stir in the juice of one lime and season with salt and pepper to taste. Step 4: Shred and Cool (20 Minutes) Once your chicken is fully cooked, use two forks to shred it directly in its cooking juices. The chicken will absorb all that delicious, seasoned salsa liquid, keeping it incredibly moist and flavorful during its time in the freezer. Turn off all heat sources. Remove the lids from both pots and let them sit on the counter to cool down (remember Rule 2!). Step 5: Portion and Pack (10 Minutes) Once the food is no longer piping hot, it is time to package it up. Chili Portions: Divide the chili into six individual containers. This gives you six grab-and-go lunches or dinners. Salsa Chicken Portions: Divide the shredded chicken into three double-serving containers (or six single-serving containers). This chicken can be thawed later to make quick tacos, topped over rice, or mixed with roasted veggies. Label each container with painter's tape, write the date, and pop them into the refrigerator to chill completely before transferring them to the freezer. In just over an hour of active kitchen time, you have created 12 delicious, gluten-free, budget-friendly meals.
